Autumn time is Pumpkin time!

This is the time where I miss home most. Wanna wear my boots and sweaters and have endless walks in the forest while sipping tea afterwards in front of the fire place in our living room.  All this makes me wanna book a ticket straight away!!

So to bring a bit of this feeling also to the tropical side of this planet I love to..

light up candles everywhere in the house ( what I mainly do the whole year round )

use aromatherapy like Sage or rosemary ( antibacterial ), cinnamon ( stimulating ), lavender ( calming )

drink even more tea ( if this is possible). One of my good old favorites is home-brewed ginger lemon tea.

wear comfy wide clothes

turn down the air con to wear my favorite beanie ( just kidding )

eating more Pomelo ( Grapefruit ) to boost my metabolism and immune system

.. and cook warm nurturing recipes which remind me of my childhood. Since most Austrians love it sweet in the morning I am going for a Pancake fall version but vegan style. Which means no eggs or dairy!

If you are not used to eat vegan give this one a try. You will be amazed how easy baking becomes and how goooood they taste!

VEGAN PUMPKIN PANCAKES ( 4 – 6 pieces )

What you need:

1 cup flour ( I use spelt )

1 cup baked pumpkin puree

1 cup ( vanilla ) oat milk

1 lemon ( juice only )

1 Tbsp coconut oil

1 tsp pure vanilla extract

3 Tbsp brown sugar

1 Tbsp maple or agave syrup

1 Tbsp baking powder

1/4 tsp cinnamon

Pinch salt

How it works:

Preheat the oven. Combine milk and lemon juice in a large bowl and let it rest for 5 minutes to curdle.

Then start peeling your pumpkin. Cut it into small pieces, place them on a tray and top with some coconut oil. Bake for about 20 minutes until they are soft enough to mash.

Meanwhile add the coconut oil, maple syrup, brown sugar and vanilla extract to your lemon-milk mix. Then put in your mashed pumpkin.

Finally mix all the dry ingredients like flour, baking soda, cinnamon and salt together and fold in your pumpkin mixture.

Heat some oil in a pan and start placing a bit of pastry on top. Create little pancakes rather than big ones since they are much easier to turn.

Fry for 1-3 minutes on each side.

Top with sliced apples, nuts, maple syrup and a dash of cinnamon, or whatever else you desire.
